Pasotismo Tinto. The beating heart of our winemaking collaboration.
‘vibrant, intense and focused with a spicy, savoury, slightly woody edge to the sleek, focused blackberry and blackcurrant fruit. Structured and focused’
- Jamie Goode.
The first truly collaborative wine in our portfolio. Born out of a shared vision for pushing boundaries and a shared passion for making wines with personality. The blend may change but the spirit never does. This is our take on classic top-tier Somontano. Structure, depth, complexity, and weight, but all delivered with our famous Paso drinkability.
Grapes - An evolving blend of Merlot, Cabernet-Sauvignon, Tempranillo, Garnacha, Syrah, Paraletta, and Moritstel.
Here’s what you
need to know.
Style - We don’t make big wines but this is our biggest. Deep black forest gateau fruits with plums and sloes, structured tannins, with a long finish.
Pairing - As it’s our biggest wine this is always pushed towards the roast dinners, the stews, and the casseroles. Recent vintages have moved the wine into a position where it will work with lighter fare but this is definitely the wine in our portfolio that can handle the biggest flavours.
Moment - I think this is our showpiece wine. The bottle you open and want to luxuriate in. So, take your time and celebrate a moment of indulgence. You deserve this!
Insight - This was our first fully collaborative wine with our parent winery Batan de Salas. A celebration of region, vintage, and us as winemakers. You can watch a video about it here :
