It’s there with the best value wines I've had this year

Paso-Primero.

These were the first wines we made and are still our signature range today. They’re consistently our best selling wines because of their unwavering drinkability.

Paso-Primero Tinto

Paso-Primero Tinto

Grapes
Merlot, cabernet-sauvignon, tempranillo, syrah, garnacha, moristel & paraletta.

Style

Bramble, cherry, black forest gateaux, smooth, round and easy going.

Pairing

Bit of an open goal here because this is the ultimate table red. Pizzas, pastas, roasts, barbeques, cold winter nights and summer evenings. It really is a superbly dependable wine.

Moment

This is the wine we drink the most so it has a lot of moments. When you want a glass of red, it’s really hard to ignore Paso-Primero Tinto.

Insight

This is the wine that launched the company and everything we’ve ever achieved since is thanks to this wine. It’s the most consistent performer in our portfolio and the first of our wines to win gold. We never knew where this adventure would take us but we always knew it would include a wine like this.

Paso-Primero Blanco

Grapes

Chardonnay and gewurztraminer.

Style

Fresh, citrus fruits with honeyed tropical fruits and a medium body.

Pairing

Really this is the perfect starter wine. If you want a wine to sip whilst you’re perusing a menu or waiting for the bbq to come up to temprature, this is the ideal wine. It cuts through all the tea and coffee you’ve had that day, wakes your palate up and gets you ready for whatever comes next.

Moment

This is always the wine we reach for when the family are over and the grill is fired up. Fresh, vibrant and fun, it puts everyone in a good mood.

Insight

The original vintages of this wine had riesling in the mix. We no longer have those vines but we kept the spirit of the high acidity alive by making sure we always grab some early pick chardonnay.

Paso-Primero Rosado

Grapes
Merlot, tempranillo & syrah.

Style

Unashamedly big and bold. Both in terms of fruit and colour!

Pairing

The ultimate wine for snacking. We know, we’ve done the research! For us, it’s bacon frazzles every time.

Moment

Rosado always gets ‘seasonlised’ so it peaks in most people’s minds in summer but for us this is the snack king. If there’s a bowl of crisps on the go, Paso-Primero Rosado will be ideal company.

Insight

Completely disregarding modern rosé trends, this wine has developed a cult following and become an invaluable addition to our portfolio. It is the only wine to outsell our Paso-Primero Tinto and has had more column inches written about it than any other wine we’ve made.

 

Pasotismo.

These wines are part of our collaboration series with our parent winery, Batan de Salas. Together we’re trying to push the limits of wines from Somontano by rediscovering indigenous varieties, farming organically and constantly looking at how we can evolve as winemakers.

Paso-Primero Tinto

Chardonnay, macabeo & alcañon.

Style

Bottled electricity. Bright, tight and bursting with elegance. Citrus flowers, stone fruits and saline acidity.

Pairing

Probably our toughest call yet as this wine screams pre-meal aperitif but it a lovely white to pair with lighter hard cheeses and smoked nuts.

Moment

This is an exciting wine so we think it’s the perfect wine to kick start a night. Either before something special or with someone special, this wine will set you up for a beautiful evening.

Insight

This wine is definitely our white whale. We’re battling hotter and drier vintages making elegant whites a difficult feat to achieve. Undaunted we’ve tried for years to find the right grapes to make a wine that fits our ambitions. By working with indigenous varieties and slowing down our processing we have finally found the right platform for Pasotismo Blanco. It will evolve, all our wines do, but this is a hell of a start.

moristel ‘76

Style

Light, bright, ripe and vivid. Cherry, raspberry and savoury, dried herbs.

Pairing

We consider this to be a ‘bistro’ wine (which basically means we see it happily on any table) but we think it’s best with a light lunch of charcuterie, freshly baked bread and cheeses or with a sweetly spiced tagine.

Moment

This wine is unlike anything else in our portfolio. A light, bright red with a improbably low alcohol content. It makes any moment its own.

Insight

When we first got to play with moristel in 2020 we had no idea it was going to revolutionise our entire winemaking philosophy but this wine opened our eyes to a world of indigenous varieties and new techniques. We learned less is more and to embrace the idiosyncrasies of every variety throughout the winemaking process. It’s a highlight of any tasting and despite being an ancient variety, is right at the forefront of modern winemaking. After nearly going extinct, moristel has an incredibly bright future.

Pasotismo Tinto

Style

Dark cherry, rich bramble, luxurious depth and a seductive finish.

Pairing

We make ‘food’ wines because that’s when wine is at its best and this is a welcome addition to any table but promise us you’ll start with a glass on its own. You’ll thank us later.

Moment

Got to be that moment of self indulgence. Whatever is for you, this wine works. Kids are in bed, dinner’s cooked, guests have just arrived/left. You name it, this wine rewards it.

Insight

This wine evolves every year. It started as a 100% barrel fermented red but has now become a fascinating study into how to get the best out of our grapes once they’ve reached the cellar. Concrete maturation, extended stem-contact, foot crushing, wild ferments, nothing is off limits.
