Paso-prima

Paso-Prima is our response to the multitude of big brands who, in their strive for continuity, have lost sight of each vintage being a completely unique snapshot of history. Wine should be a wonderful combination of a sense of place and sense of time but modern purchasing patterns have meant half of that beautiful balance is being lost. We wanted to re-dress that balance and celebrate the unique attributes of each individual year. That’s why the Paso-Prima project was born where we throw the rule book out and simply make the best wine we can. No style or varietal constraints, just quality wine production and the best wine that each year can bring.

Looking out for birds with the British Trust for Ornithology.

Paso-Prima 2017 is finally here and while it’s always exciting to release a new wine, this year’s addition to our Prima series is even more special than usual. As well as being the best wine we could make in 2017, Paso-Prima is supporting the fantastic British Trust for Ornithology (https://www.bto.org) to highlight the importance of cork forests to migrating birds from the UK and around the world. We believe using cork is vitally important to maintaining healthy bird populations and even our beloved mascot the Wren is at risk of losing essential habitat. That’s why we’re donating 25% of the profits from this wine to the British Trust for Ornithology who use evidence of population changes to inform environmental decision makers around the world.

Every year our Paso-Prima is a completely unique wine with the only rule being to make the best wine possible. Our 2017 edition is a bombastic blend of Garnacha and Cabernet-Sauvignon which is soft, supple, bursting with bramble fruits and ideally suited to the recent drop in temperatures. To celebrate the individuality of Paso-Prima we give each vintage a unique label. This year’s label has been created by our great friend Lyn Evans (https://www.lynevansdesigns.co.uk/) who used copies of the BTO’s magazine to pay a fitting homage our beloved Wren.

We’d also like to say a huge thank you to Steve Oliver (https://www.facebook.com/StevenOlivers) and The Artisan’s Storyteller (www.artisansstoryteller.com/) for our wonderful photos.

 Paso-Prima 2016

Paso-Prima 2016

2016

We are incredibly excited to continue our Paso-Prima series with our first ever Chardonnay. Right from the start this wine has been wonderfully unique and is a perfect addition to our celebration of the artistry involved in winemaking.

We approached every stage of production with extreme care to subtly enhance flavour development while preserving the beautiful characteristics of Somontano Chardonnay. The result is a rich, full bodied Chardonnay with tropical fruits and fresh citric acidity set against a lightly oaked backdrop of soft, biscuity flavours.

 Paso-Prima 2015

Paso-Prima 2015

2015

Paso-Prima 2015 is a big, rounded red with soft, plush fruit and a long, deep finish. Made from 100% Cabernet-Sauvignon it  has structure and complexity but this is all balanced out by the classic fruit-forwards Paso-Primero style. Easy drinking for such a big wine Paso-Prima is perfect for fighting off those winter blues. Pair it with roast dinners and stews or simply by the glass in front of an open fire.
